The new Michelin guide will be unveiled on Monday. And often the name Peter Goossens falls as there godfather in our gastronomy. But the wide blanket of the stars is Antwerp chef Johan Segers van ‘t Fornuis. 72 years old and the chef who kept his star for the time in the same business. “That everything used to be better? Zever. Much has improved. It is even finished now. My work is not normal anymore. In the long run, you as a cook belong to the gods. To the BVs.”
