Collingwood Restaurant LORE Earns Michelin Recognition Outside Toronto

LORE Restaurant at 100 Pine St. in Collingwood secured a spot on the Michelin Recommended list during the Sept. 22 reveal for the Michelin Guide Toronto and Region, according to orilliamatters.com. The establishment, which opened in May, also earned a service award for general manager Eric Roell. This year, the guide featured 65 recommended restaurants, though most Michelin-Starred locations are in Toronto.

“It’s very surreal. We never thought LORE would even be considered. It’s unusual that the Michelin Guide leaves the borders of Toronto,” chef and co-owner Jeremy Austin said in an interview published by orilliamatters.com.

Evolution From The Pine to LORE in South Georgian Bay

Co-owners Jeremy and Cassie Austin originally opened The Pine in August 2020 on Hurontario Street in Collingwood, before relocating to Creemore in 2024 for a larger space, orilliamatters.com reported. The Pine has maintained one Michelin star for the past three years. Austin, who grew up in Thornbury and worked in Italy, France, and Shanghai, launched LORE in May as the couple’s second restaurant. One dish, Walter’s Albacore, is named after bartender Walter Chell, the creator of The Caesar; it features borage leaf, pickled surf clams, Albacore tuna tartare and tomato broth.

CTV News reported that Langdon Hall Country House & Spa in Cambridge and odd duck | wine & provisions in Kitchener both earned spots on the 2026 Recommended Restaurants list for the Toronto and Region guide. Langdon Hall, which was recommended in 2024, lists a casual Wilks Bar and a “refined” dining room on its website. The Kitchener-based odd duck, which appeared on the 2025 list, operates on a “no-tipping, people first hospitality model” at its Ontario Street location. Restaurant Pearl Morissette in Lincoln earned two stars, and Down Home in Markdale also holds a Michelin Recommendation, according to orilliamatters.com.
