Every ingredient in these test meals had been weighed to the nearest 0.1 gram, providing a definitive nutritional baseline for comparison.
When the apps estimated the nutritional content from photographs alone, the results consistently skewed low. Across all four platforms, calorie counts fell short by an average of 250 to 345 calories per meal. Furthermore, the apps underestimated fat content by approximately 30 grams per meal, though their carbohydrate calculations proved more consistent.
Subsequent testing involving more than 200 additional meals indicated that high-fat, low-carbohydrate dishes present the greatest challenge for current AI visual recognition technology.

Modern diet apps use computer vision to identify foods on a plate, estimate portion sizes, and cross-reference that data with nutritional databases. However, Aaron Hengist, a postdoctoral visiting fellow at the US National Institute of Diabetes and Digestive and Kidney Diseases, points out the inherent limitations of photography.
“The accuracy of many of these apps has not been thoroughly evaluated,” Hengist says, noting that his team’s study helps address whether these platforms can reliably estimate daily intake. A photograph cannot capture invisible variables, such as the exact amount of cooking oil used to roast vegetables, whether a cook used light or dark soy sauce, or the precise density of a mound of pasta.
“People using a photo-based tracking app without adjusting the portions or entering the amounts of food should take the results with a grain of salt,” Hengist advises. “These apps tend to underestimate calories, especially from fats, so what they actually ate is likely higher than what the app shows.”
The Psychological Toll of Digital Dieting
While some users find tracking apps helpful for building nutritional awareness, separate research highlights potential mental health drawbacks. A study from University College London and Loughborough University analyzed 13,799 negative social media posts concerning popular fitness and calorie-tracking apps.
Users frequently reported feeling pestered by frequent notifications, experiencing shame when failing to meet daily targets, and feeling demoralized after breaking a logging streak. Co-author Dr. Lucy Porter notes that these emotional reactions often trigger counterproductive habits.
“Listening to users’ reports on social media has shown that fitness apps can sometimes leave users feeling demoralised and ready to give up – which is the exact opposite of what these tools are supposed to do,” Dr. Porter says. “We know from previous research that feeling ashamed and miserable about yourself is not going to support healthy, long-term behaviour change.”

Medical and eating-disorder charities emphasize that numerical tracking is not suitable for everyone. The eating-disorder charity Beat has warned that weight-loss and calorie-tracking apps pose distinct risks for individuals living with, recovering from, or vulnerable to eating disorders.
