200g ground chicken
1 tbsp Yamaki soy sauce seasoning
1 tbsp miso paste
1 tsp grated ginger
1 tsp sugar

I didn’t have tenmenjang, so I substituted with miso. I wonder if it will still taste good?
Let’s see what the reviews say.
Instructions – Step 1

The official recipe uses a microwave, but I’m making this in a small pot.
Add all the ingredients to the pot.
Instructions – Step 2

Mix the seasoning well and turn on the heat.
Instructions – Step 3

Stir with a spatula while breaking up the chicken into a crumbly texture. Once the chicken is cooked through, it’s ready!
Tasting Notes

The soboro is tender, and the soy sauce flavor has really soaked in. The umami from the miso is also a plus!
The sweet and savory flavor pairs perfectly with white rice.

The Rise of Umami-Rich Quick Meals: A Trend Analysis
The popularity of this Yamaki soboro recipe isn’t an isolated incident. It reflects a broader trend towards quick, flavorful meals that leverage umami – the fifth basic taste often described as savory. Consumers, particularly millennials and Gen Z, are increasingly time-poor but still prioritize delicious, home-cooked food. This recipe ticks both boxes.
The Convenience Factor & Meal Kit Influence
The ease of preparation – requiring minimal ingredients and cooking time – is a major draw. This aligns with the success of meal kit services like HelloFresh and Blue Apron, which emphasize convenience and reduced food waste. However, recipes like this offer an even more affordable and flexible alternative. According to a recent report by Grand View Research, the global meal kit delivery services market size was valued at USD 15.21 billion in 2021 and is expected to grow at a compound annual growth rate (CAGR) of 12.8% from 2022 to 2030. This demonstrates a clear demand for simplified cooking solutions.
Japanese Flavors Gain Global Traction
Japanese cuisine, known for its umami-rich ingredients like soy sauce, miso, and dashi, is experiencing a surge in global popularity. This is driven by increased travel, exposure through media (like Netflix’s “Chef’s Table”), and a growing appreciation for healthy and flavorful food. The use of men-tsuyu, a pre-made soy sauce seasoning, simplifies the process of achieving authentic Japanese flavors, making it accessible to home cooks.
Miso’s Moment: Beyond Traditional Uses
The recipe’s use of miso as a substitute for tenmenjang highlights miso’s versatility. Traditionally used in soups and marinades, miso is now being incorporated into a wider range of dishes, from baked goods to sauces. Its complex flavor profile and nutritional benefits (it’s a good source of probiotics) are contributing to its rising popularity. A 2023 study by Mintel revealed a 35% increase in food and drink launches featuring miso globally in the past two years.
The Power of Social Media & Food Blogging
Recipes like this thrive on platforms like Instagram, TikTok, and food blogs.
