Has any sandwich achieved perfection quite like a BLT? We think not, and actor Glen Powell agrees. He’s behind the condiment brand Smash Kitchen, which is evident in his passion for a generously sauced BLT. Powell visited the Delish Test Kitchen to teach us exactly how to make his perfect BLT, which may seem standard on the surface, but has some surprise (and worthwhile) additions.
Powell’s 5 Golden Rules For A Perfect BLT
Make the best bacon: A BLT is only as good as its bacon, and Powell has some tips for making the best strips possible. He says to take it out after 10 minutes in the oven, lather it in BBQ sauce, then put it back in the oven for 5 to 10 more minutes. The result? Saucy, slightly sweet, flavorful bacon.
Prioritize your bread: Go big or go home, says Powell, when it comes to the bread. He prefers brioche, but you can use any quality sandwich bread that you love toasting.
Mayo > butter: Instead of using butter, Powell prefers to spread mayo on his slices of bread before toasting them, and we totally get it. The result is perfectly golden brown slices with so much flavor (try it with your grilled cheese next!).
Mustard is a must: This might be Powell’s most controversial BLT opinion: Mustard and mayo belong on your BLT. Spread both on your bread for even more flavor in every single bite—don’t knock it ’til you try it!

Ingredients
Step 1Arrange a rack in center of oven; preheat to 400°. On a foil-lined baking sheet, arrange bacon in a single layer.
Step 2Roast bacon for 10 minutes, then remove from oven and brush with BBQ sauce. Continue to roast until crispy, 5 to 10 minutes more.
Step 3Meanwhile, spread 1 Tbsp. mayonnaise on one side of each slice of bread. In a large skillet or griddle over medium heat, toast bread, mayonnaise side down, until golden brown and fragrant, about 2 minutes. Flip and cook until just warmed through, about 1 minute more. Transfer bread, mayonnaise side down, to a cutting board.
Step 4Spread 4 bread slices with more mayonnaise. Top with lettuce and tomatoes; season with salt, then arrange bacon on top. Spread remaining 4 bread slices with mustard, then close sandwiches mustard side down. Slice in half to serve.
