University of Toronto Study Finds Full-Fat Dairy Safe for Metabolism

A new Canadian study led by University of Toronto researcher Harvey Anderson reveals that adults can consume three daily servings of full-fat dairy without harming body weight, metabolism, or blood lipid levels. Published in The Journal of Nutrition, the findings challenge decades of low-fat dietary guidance.

For decades, shoppers browsing the dairy aisle have been steered toward skim milk and reduced-fat products. Traditional dietary advice in Canada and many other countries cautioned that the saturated fat in dairy raised blood cholesterol and increased the risk of cardiovascular disease. A new human study, however, suggests those long-held concerns do not match the evidence from controlled feeding trials.

University of Toronto Study Puts Full-Fat Dairy to the Test

The research, published in The Journal of Nutrition, was led by Harvey Anderson, a professor of nutritional sciences at the University of Toronto’s Temerty Faculty of Medicine. To examine how dairy impacts the human body under strict conditions, researchers recruited 74 adults with overweight or obesity and randomly assigned them to one of three dietary groups for 12 weeks.

One group followed a low-dairy, calorie-restricted diet. A second group consumed an energy-neutral diet that included three daily servings of full-fat dairy, meaning participants ate roughly the amount of energy their bodies used. A third group followed an unrestricted diet that also incorporated three daily servings of full-fat dairy. Participants in the dairy groups were supplied with full-fat products throughout the trial.

Weight, Cholesterol, and Blood Pressure Outcomes After 12 Weeks

When the 12-week intervention concluded, researchers found no meaningful differences in weight gain, body composition, or cholesterol levels between the participants following the low-dairy diet and those eating three servings of full-fat dairy every day. Furthermore, participants consuming the higher-dairy diets recorded lower blood pressure readings and increased their intake of essential nutrients like calcium, protein, and vitamin D.

Insulin resistance happens when cells stop responding properly to insulin, the hormone responsible for moving sugar from the bloodstream into cells for energy. Over time, that reduced response can elevate the risk of developing type 2 diabetes. According to Anderson, the trial demonstrated that including three daily servings of full-fat dairy did not trigger insulin resistance or abnormal lipid spikes.

Understanding the Dairy Matrix Hypothesis

The apparent mismatch between the expected harms of saturated fat and the neutral or beneficial effects observed in recent human trials is explained by what scientists call the dairy matrix hypothesis. This concept posits that the physical structure of a food influences how its nutrients are digested, absorbed, and utilized by the body, rather than depending solely on the presence of a single isolated nutrient.

This complex arrangement allows nutrients to be delivered to the body gradually over time. That slow and steady delivery helps explain why the metabolic effects of whole dairy products differ from what would be predicted by examining saturated fat in isolation.

Nutritional Implications for Older Adults

The study’s authors point out that these findings carry particular significance for older adults. As people age, their overall energy needs decline, making it harder to consume adequate protein, calcium, and vitamin D without exceeding appropriate calorie limits. Because dairy is already a familiar food that packs concentrated nutrients into a smaller volume, it offers a practical way to meet dietary requirements without raising chronic disease risks.

The research was supported by Dairy Research Cluster 3 under the Canadian Agricultural Partnership AgriScience Program, alongside the Mitacs Accelerate program. While nutrition advice continues to evolve, Anderson emphasizes a straightforward approach to daily eating: keep meals simple, enjoy a variety of foods, and avoid overindulging in any single item.
