In various cultures around the world, olas, or eggs, are not only a nourishing food source but also a symbolic element used in traditional celebrations, such as New Year’s greetings, to bring good luck and prosperity. It’s nearly impossible to imagine a holiday spread without these versatile, nutrient-rich ingredients.

"Many holiday dishes across the globe, including those for Christmas, would be unimaginable without eggs, which are universally accessible and rich in essential proteins, vitamins, and minerals," explains Anna Ērliha, Director of the Latvian Association of Food Producers (LAPNA). "Eggs should be a part of everyone’s daily diet, not just during the holidays."

In celebration of the holiday season, experts share a traditional holiday recipe from around the world that features eggs:


Recipe: Italian Torta Pasqualina

This traditional Italian Easter pie, also known as the "Easter Cake" or "Egg Pie," is a delicious blend of spring flavors and a perfect example of eggs taking center stage in a holiday dish.

Ingredients:

  • 500g puff pastry
  • 500g Swiss chard or spinach
  • 200g ricotta cheese
  • 200g feta cheese
  • 8 eggs
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • Olive oil

Instructions:

  1. Cook and chop the Swiss chard or spinach. Sauté garlic in olive oil, add the greens, and cook until wilted. Season with salt and pepper, then set aside to cool.
  2. Roll out the puff pastry and line a round baking dish, pressing it gently into the sides.
  3. Spread the ricotta cheese evenly over the pastry base, followed by the cooled greens and crumbled feta cheese.
  4. Gently make 8 indentations in the greens mixture and carefully break an egg into each one.
  5. Cover the pie with another layer of rolled-out pastry, crimping the edges to seal. Brush with olive oil and make a few slits in the top to allow steam to escape.
  6. Bake at 180°C (350°F) for approximately 45-50 minutes, or until golden brown.
