Boil the vegetables with the broth until completely dry. Heat lightly with butter and oil, then add water or broth and cook until the vegetables are mostly dry. “This way, the flavor that’s in the broth spreads into the vegetable. Many people boil and strain this liquid, but that actually loses the strength of the flavor. So if you boil it almost dry with the broth, all the flavor found in the broth/liquid is transferred to the vegetables and the puree becomes significantly tastier”, explains the expert chef.

Then blend the mixture in a good blender with HOT whipped cream until smooth. Vegetables are often boiled with whipped cream, but this leaves the result too greasy, which is why Sõmer does not recommend this option. However, adding hot whipped cream gives the vegetable puree just the right finish.
