“Ginger warms the energy of the stomach and the energy of the lungs,” explains Bürkland. “It’s great for fighting colds in the early stages and for strengthening digestion. Ginger warms our core: we are balanced, we can respond appropriately to the outside and come back inside.”

Winter is not forever, so it is worth preparing for next spring. “The flavor of spring is spicy,” advises the expert. “And there’s just one of the best things that grows in spring: shallots. It’s sharp, warm in nature and awakens the body in spring.”

Why do we so often suffer from spring fatigue? “The norm is that in the winter we work and in the summer we rest, but in the winter we should take it easy,” explains Bürkland. “That doesn’t mean we should stay on the stove during the winter. But our goal is to maintain heat and energy within the body. What brings this out? A very strong workout, for example. According to Chinese medicine in winter you need to save energy. So you can wake up in spring. If you spend your energy in winter, you will be tired in spring: you have nothing to bring to the surface from the inside and the surface will remain thin.
