“In wheat cultivation, a lot depends on the weather conditions. The quality of the fruit varies due to the unstable climate and the destinations where our fruit can be sold also depend on this,” explained Pähkel. He added that lower quality food grain mainly goes to Algeria. Higher category fruit is purchased from Spain or other African countries.

Different countries’ requirements for food grains arise from their intended use. For example, in France and Scandinavian countries, bread must be soft and fluffy. However, to obtain excellent leavening flour, the wheat must possess all the ideal quality indicators. Often our fields may not produce such fruits. In Africa and Spain, soft wheat breads are traditionally produced, which do not require a lot of flour with good leavening properties. Such flour, for example, has a slightly lower protein content, although all other quality indicators may be very good, the resulting dough does not rise very fluffy.

“The quantity of our grain is still small compared to the rest of the world. If we compare, for example, with Lithuania, the volumes are much larger. With larger volumes, it is a little easier to produce fruit of consistent quality,” he said. Pähkel stated.

He added that although we export a lot compared to the rest of the world, it is even more important that the Estonian farmer is able to produce fruit of the highest possible quality. “Only with a great product can you be competitive and get a fair price for your efforts.”
